Ingredients

  • 4 chicken thighs
  • 1 cup basmati rice
  • 2 cups chicken broth
  • 1 lemon, juiced
  • 2 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a pan and sear the chicken thighs until golden brown.
  2. Place the rice in the bottom of the slow cooker.
  3. Add chicken broth, lemon juice, minced garlic, thyme, rosemary, salt, and pepper.
  4. Arrange the seared chicken on top of the rice mixture.
  5. Cover and cook on low for 6-8 hours or high for 4 hours.
  6. Once cooked, fluff the rice and serve with chicken.

Notes

  • For extra flavor, marinate the chicken in lemon juice and herbs the night before.
  • This dish pairs well with steamed vegetables.
