A comforting and hearty slow-cooker ratatouille that is easy to make and full of nourishing vegetables.

Ingredients

  • 2 cups zucchini, chopped
  • 1 cup eggplant, diced
  • 1 cup bell pepper, chopped
  • 1 cup onion, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat the olive oil in a pan and sauté the onion and garlic until translucent.
  2. Add the eggplant, zucchini, and bell pepper; cook for a few minutes.
  3. Transfer the vegetables to a slow cooker.
  4. Add the diced tomatoes, basil, oregano, salt, and pepper.
  5. Cook on low for 6-8 hours or high for 3-4 hours.
