- 1 cup eggplant, diced
- 1 cup bell pepper, chopped
- 1 cup onion, chopped
- 3 cloves garlic, minced
- 1 can diced tomatoes
- 2 tablespoons olive oil
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt to taste
