  • 2 cups cooked chicken, shredded
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 cup shredded cheese
  • 2 cups tortilla chips
  • 1 tablespoon taco seasoning
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onion
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked chicken, black beans, corn, diced tomatoes, taco seasoning, bell peppers, onion, and cilantro.
  3. In a greased casserole dish, layer half of the tortilla chips, half of the chicken mixture, and half of the cheese. Repeat the layers.
  4. Bake for 25-30 minutes or until the cheese is melted and bubbly.
  5. Let cool for a few minutes before serving.
