  • 2 cups jasmine rice
  • 1 can coconut milk
  • 4 salmon fillets
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1/4 cup chopped green onions
  • 1 lime, juiced

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. Combine the rice and coconut milk in a medium pot and cook according to package instructions.
  3. In a bowl, mix soy sauce, sriracha, garlic powder, and ginger powder.
  4. Marinate the salmon fillets in the sauce for at least 30 minutes.
  5. Heat a grill pan over medium-high heat and cook the salmon for 4-5 minutes on each side.
  6. Fluff the coconut rice and stir in the lime juice and chopped green onions.
  7. Serve the salmon over the coconut rice.

Notes

  • Feel free to adjust the spice level by adding more or less sriracha.
