A delicious and easy recipe for sundried tomato, spinach, and cheese stuffed chicken that is perfect for weeknight dinners.

  • 4 chicken breasts
  • 1 cup sundried tomatoes, chopped
  • 1 cup fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 2 clove garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine sundried tomatoes, spinach, ricotta, mozzarella, garlic, Italian seasoning, salt, and pepper.
  3. Slice each chicken breast to create a pocket and stuff it with the cheese mixture.
  4. In a skillet, heat olive oil over medium-high heat and sear chicken for 3-4 minutes on each side.
  5. Transfer the chicken to a baking dish and bake for 25-30 minutes until cooked through.
  6. Let it rest for a few minutes before serving.
