  • 2 tablespoons vegetable oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon ginger grated
  • 2 tablespoons red curry paste
  • 1 can (14 oz) coconut milk
  • 4 cups chicken broth
  • 1 pound chicken breast sliced
  • 8 oz rice noodles
  • 1 cup bell peppers sliced
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • 1/4 cup cilantro chopped

Instructions

  1. Heat the oil in a large pot over medium heat. Add onions and cook until translucent.
  2. Add garlic and ginger and sauté for another minute.
  3. Stir in red curry paste and cook for 2 minutes.
  4. Pour in coconut milk and chicken broth, and bring to a simmer.
  5. Add chicken slices and cook until no longer pink.
  6. Add rice noodles and bell peppers, cooking until noodles are tender.
  7. Stir in fish sauce and lime juice. Serve garnished with cilantro.
