Ingredients

Scale
  • 6 egg yolks
  • 3/4 cup granulated sugar
  • 2/3 cup milk
  • 1 cup heavy cream
  • 8 ounces mascarpone cheese
  • 1 cup brewed espresso, cooled
  • 2 tablespoons coffee liqueur (optional)
  • 24 ladyfinger cookies
  • 2 tablespoons cocoa powder

Instructions

  1. In a large bowl, whisk together egg yolks and sugar until thick and pale.
  2. In a saucepan, heat milk over medium heat until just simmering. Slowly whisk into egg mixture.
  3. Return mixture to saucepan, cook over low heat, stirring constantly until it thickens. Remove from heat and cool.
  4. In another bowl, whip heavy cream until stiff peaks form. Fold into cooled mixture.
  5. Fold in mascarpone cheese until smooth.
  6. In a shallow dish, combine espresso and liqueur. Quickly dip ladyfingers into mixture and layer in a dish.
  7. Spread half of the mascarpone mixture over the ladyfingers. Repeat layers.
  8. Cover and refrigerate for at least 4 hours or overnight.
  9. Before serving, dust with cocoa powder.

Notes

  • For a stronger coffee flavor, let the ladyfingers soak longer in the espresso mixture.
  • Use high-quality cocoa powder for dusting.
