Ingredients

  • 1 cup cooked black beans
  • 1 cup cooked rice
  • 1 diced bell pepper
  • 1 diced onion
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 tablespoon olive oil
  • 4 large flour tortillas
  • ½ cup salsa
  • 1 avocado sliced
  • ½ cup fresh cilantro, chopped

Instructions

  1. Heat olive oil in a skillet over medium heat, add onion and garlic, and sauté until translucent.
  2. Add bell pepper, cooked black beans, cooked rice, cumin, and chili powder. Mix and cook until heated through.
  3. Warm tortillas in a separate pan or microwave.
  4. Spoon the mixture into each tortilla and top with salsa, avocado, and cilantro.
  5. Roll the tortilla, folding in the sides, to form a burrito.
  6. Serve immediately.
