  • 4 bone-in, skin-on chicken thighs
  • 1/2 cup green olives, pitted and halved
  • 1/4 cup prunes, chopped
  • 1/4 cup capers, rinsed
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 1 tablespoon garlic, minced
  • 1 tablespoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F.
  2. In a large bowl, combine the chicken thighs with olives, prunes, capers, vinegar, olive oil, garlic, oregano, salt, and pepper.
