A comforting and delicious twist on chili with white chicken and the added flavor of turkey bacon.

Ingredients

  • 1 pound white chicken meat
  • 4 strips turkey bacon
  • 1 can white beans
  • 2 cups chicken broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 green bell pepper, diced
  • 1 cup corn

Instructions

  1. Cook turkey bacon in a large pot over medium heat until crispy. Remove and crumble.
  2. In the same pot, sauté onion and garlic in olive oil until softened.
  3. Add the chicken, spices, and cook until the chicken is no longer pink.
  4. Stir in the beans, broth, bell pepper, and corn.
  5. Bring to a boil, then simmer for 20 minutes.
  6. Garnish with crumbled turkey bacon before serving.

Notes

  • For extra flavor, add jalapeños.
  • Serve with tortilla chips for crunch.
