- 1 pound white chicken meat
- 4 strips turkey bacon
- 1 can white beans
- 2 cups chicken broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 green bell pepper, diced
- 1 cup corn
- Cook turkey bacon in a large pot over medium heat until crispy. Remove and crumble.
- In the same pot, sauté onion and garlic in olive oil until softened.
- Add the chicken, spices, and cook until the chicken is no longer pink.
- Stir in the beans, broth, bell pepper, and corn.
- Bring to a boil, then simmer for 20 minutes.
- Garnish with crumbled turkey bacon before serving.
