A comforting and flavorful white chicken chili that features a unique twist with turkey bacon, perfect for chilly nights.

  • 1 pound cooked, shredded chicken
  • 4 slices turkey bacon, cooked and chopped
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (14 oz) diced tomatoes with green chilies
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup sour cream
  • 1/4 cup chopped fresh cilantro

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the onion and cook until translucent, about 5 minutes.
  2. Add the garlic, cumin, chili powder, salt, and pepper. Cook for an additional minute until fragrant.
  3. Stir in the cooked chicken, turkey bacon, white beans, diced tomatoes, and chicken broth. Bring to a simmer.
  4. Reduce heat and stir in the sour cream. Heat through but do not boil.
  5. Garnish with fresh cilantro before serving.

Notes

  • For a creamier texture, blend some of the beans before adding to the pot.
  • Adjust the spice level by adding more chili powder or jalapeños.
