- 1 pound cooked, shredded chicken
- 4 slices turkey bacon, cooked and chopped
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (14 oz) diced tomatoes with green chilies
- 1 cup chicken broth
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup sour cream
- 1/4 cup chopped fresh cilantro
- In a large pot, heat olive oil over medium heat. Add the onion and cook until translucent, about 5 minutes.
- Add the garlic, cumin, chili powder, salt, and pepper. Cook for an additional minute until fragrant.
- Stir in the cooked chicken, turkey bacon, white beans, diced tomatoes, and chicken broth. Bring to a simmer.
- Reduce heat and stir in the sour cream. Heat through but do not boil.
- Garnish with fresh cilantro before serving.
