- 3 pounds beef chuck roast
- 2 cups beef broth
- 3 dried guajillo chiles, stemmed and seeded
- 2 dried ancho chiles, stemmed and seeded
- 1 onion, quartered
- 4 cloves garlic
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- 1 teaspoon ground black pepper
- 1 teaspoon salt
- 12 corn tortillas
- 1 cup chopped fresh cilantro
- 1 lime, cut into wedges
- In a blender, combine beef broth, guajillo chiles, ancho chiles, onion, garlic, cumin, oregano, black pepper, and salt. Blend until smooth.
- Place the beef chuck roast in the slow cooker and pour the blended mixture over the top.
- Cover and cook on low for 8 hours or until the meat is tender.
- Remove the meat from the slow cooker and shred it with a fork.
- Heat tortillas in a skillet, then fill with shredded meat and top with cilantro and lime juice.
Notes
- Serve with additional lime wedges for drizzling.
- For extra flavor, you can sear the beef chuck roast before adding it to the slow cooker.
