Authentic and Flavorful Slow Cooker Birria Tacos are a delightful family meal that brings rich flavors and comforting textures to the table.

  • 3 pounds beef chuck roast
  • 2 cups beef broth
  • 3 dried guajillo chiles, stemmed and seeded
  • 2 dried ancho chiles, stemmed and seeded
  • 1 onion, quartered
  • 4 cloves garlic
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 12 corn tortillas
  • 1 cup chopped fresh cilantro
  • 1 lime, cut into wedges

Instructions

  1. In a blender, combine beef broth, guajillo chiles, ancho chiles, onion, garlic, cumin, oregano, black pepper, and salt. Blend until smooth.
  2. Place the beef chuck roast in the slow cooker and pour the blended mixture over the top.
  3. Cover and cook on low for 8 hours or until the meat is tender.
  4. Remove the meat from the slow cooker and shred it with a fork.
  5. Heat tortillas in a skillet, then fill with shredded meat and top with cilantro and lime juice.

Notes

  • Serve with additional lime wedges for drizzling.
  • For extra flavor, you can sear the beef chuck roast before adding it to the slow cooker.
