A delicious and easy Baked Southwest Chicken Casserole that is perfect for family meals.

  • 2 cups cooked chicken, shredded
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cups cooked rice
  • 1 cup salsa
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 cup shredded cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, black beans, corn, bell pepper, onion, rice, salsa, chili powder, and cumin.
  3. Transfer the mixture into a greased 9×13 inch baking dish and spread evenly.
  4. Top with shredded cheese.
  5. Bake for 25-30 minutes until heated through and cheese is bubbly.

Notes

  • For added spice, consider adding jalapeños to the mixture.
  • This casserole can be made ahead of time and stored in the refrigerator before baking.
