2 cups all-purpose flour
1 cup granulated sugar
1/2 cup brown sugar
1 cup unsalted butter, softened
4 large eggs
1 cup mashed ripe bananas
1 tsp vanilla extract
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
8 oz cream cheese, softened
4 cups powdered sugar
2 cups heavy cream
Instructions
Preheat the oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
Add eggs, one at a time, mixing well after each addition. Stir in mashed bananas and vanilla.
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
Gradually add the dry ingredients to the banana mixture, mixing until just combined.
Divide the batter evenly among the prepared pans.
Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring to wire racks.
For the frosting, beat the cream cheese until smooth. Gradually add powdered sugar, mixing until smooth and creamy.
Once the cakes are completely cool, frost between the layers and the top of the cake with the cream cheese frosting.
Whip the heavy cream until stiff peaks form, then spread over the entire cake for an extra layer of creaminess.
Notes
For best flavor, use very ripe bananas.
