- 1 pound boneless, skinless chicken thighs
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes, undrained
- 2 cups chicken broth
- 1 tablespoon Cajun seasoning
- 1 teaspoon dried oregano
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 cup corn, frozen or canned
- 1/2 cup heavy cream
- 1/4 cup chopped fresh parsley
- Heat olive oil in a large pot over medium-high heat. Add the chicken and cook until browned, about 5-7 minutes. Remove and set aside.
- Add onion and garlic to the pot; sauté until translucent.
- Stir in the beans, tomatoes, chicken broth, Cajun seasoning, oregano, black pepper, and salt. Bring to a boil.
- Return the chicken to the pot and reduce heat to a simmer. Cover and cook for 25-30 minutes.
- Stir in corn and heavy cream; cook for an additional 5 minutes.
- Garnish with fresh parsley before serving.
Notes
- Adjust the spice level by adding more or less Cajun seasoning.
- Serve with crusty bread for dipping.
