A flavorful and comforting dish combining Cajun spices with tender chicken and creamy white beans.

Ingredients

  • 1 pound boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 cups chicken broth
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 cup corn, frozen or canned
  • 1/2 cup heavy cream
  • 1/4 cup chopped fresh parsley

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add the chicken and cook until browned, about 5-7 minutes. Remove and set aside.
  2. Add onion and garlic to the pot; sauté until translucent.
  3. Stir in the beans, tomatoes, chicken broth, Cajun seasoning, oregano, black pepper, and salt. Bring to a boil.
  4. Return the chicken to the pot and reduce heat to a simmer. Cover and cook for 25-30 minutes.
  5. Stir in corn and heavy cream; cook for an additional 5 minutes.
  6. Garnish with fresh parsley before serving.

Notes

  • Adjust the spice level by adding more or less Cajun seasoning.
  • Serve with crusty bread for dipping.
