- 1 pound boneless, skinless chicken breasts
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes
- 1 packet taco seasoning
- 4 cups chicken broth
- 1 cup diced onion
- 1 cup diced bell pepper
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 2 cups tortilla chips, for serving
- In a large pot, heat olive oil over medium heat. Add onions, bell peppers, and garlic, and sauté until softened.
- Add chicken breasts, taco seasoning, black beans, corn, diced tomatoes, and chicken broth.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes, until chicken is cooked through.
- Remove chicken, shred it, and return to the soup.
- Serve hot with tortilla chips.
