A delicious and easy chicken taco soup perfect for cozy nights.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • 4 cups chicken broth
  • 1 cup diced onion
  • 1 cup diced bell pepper
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 cups tortilla chips, for serving

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, bell peppers, and garlic, and sauté until softened.
  2. Add chicken breasts, taco seasoning, black beans, corn, diced tomatoes, and chicken broth.
  3. Bring to a boil, then reduce heat and simmer for 20-25 minutes, until chicken is cooked through.
  4. Remove chicken, shred it, and return to the soup.
  5. Serve hot with tortilla chips.

Notes

  • Top with avocado, sour cream, and cheese for added flavor.
  • This soup can be easily doubled for a larger crowd.
