An easy and flavorful twist on the traditional chickpea salad.

Ingredients

  • 2 cups cooked chickpeas
  • 1 cup diced cucumber
  • 1 cup halved cherry tomatoes
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large bowl, combine the chickpeas, cucumber, cherry tomatoes, red onion, and parsley.
  2. In a separate small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Serve immediately or chill in the refrigerator for 30 minutes to allow flavors to meld.

Notes

  • For extra flavor, add crumbled feta cheese.
  • This salad can be made a day in advance.
