  • 1 pound chicken thighs
  • 1 can (14 oz) coconut milk
  • 2 tablespoons curry powder
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ginger, minced
  • 1 bell pepper, sliced
  • 1 cup spinach
  • 1 tablespoon lime juice

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion, garlic, and ginger, and sauté until fragrant.
  3. Stir in chicken thighs and cook until browned.
  4. Pour in coconut milk and add curry powder, stirring well.
  5. Add bell pepper and simmer for 15 minutes.
