  • 2 cups jasmine rice
  • 1 pound chicken breasts, diced
  • 1 can coconut milk
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup mixed vegetables (carrots, peas, bell peppers)

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a large pot, heat olive oil over medium heat and add diced chicken. Cook until browned.
  3. Add garlic powder, onion powder, salt, and pepper to the chicken. Stir to combine.
  4. Pour in coconut milk and chicken broth, followed by the rinsed rice. Mix well.
  5. Bring to a boil, then reduce heat, cover, and simmer for about 20 minutes or until rice is cooked and liquid is absorbed.
  6. Stir in mixed vegetables and let sit for 5 minutes before serving.
