  • 1 pound chicken breast, diced
  • 1 tablespoon cajun seasoning
  • 1 tablespoon olive oil
  • 1 cup onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup parmesan cheese, grated
  • 2 cups pasta, uncooked
  • 1 cup bell peppers, diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced chicken and cajun seasoning, cooking until the chicken is no longer pink.
  3. Stir in onion, garlic, and bell peppers, cooking until softened.
  4. Pour in chicken broth and bring to a boil.
  5. Add uncooked pasta and simmer until pasta is tender.
  6. Reduce heat and stir in heavy cream and parmesan cheese.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with additional parmesan if desired.
