A delicious and creamy street corn pasta salad featuring turkey bacon, perfect for summer gatherings.

Ingredients

  • 8 ounces elbow macaroni
  • 1 cup sweet corn, cooked
  • 4 slices turkey bacon, cooked and crumbled
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup cilantro, chopped
  • 1 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Boil the elbow macaroni until al dente, then drain and cool.
  2. In a large bowl, combine the cooled macaroni, sweet corn, turkey bacon, cherry tomatoes, red onion, and cilantro.
  3. In a separate bowl, mix mayonnaise, lime juice, chili powder, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.
