- 1 pound ground beef
- 1 can kidney beans, drained and rinsed
- 1 can cannellini beans, drained and rinsed
- 1 can diced tomatoes
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup onion, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 tablespoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 8 ounces ditalini pasta
- In a large skillet, brown the ground beef over medium heat. Drain excess fat.
- Combine ground beef, beans, diced tomatoes, carrots, celery, onion, garlic, beef broth, Italian seasoning, salt, and pepper in the Crock Pot.
- Cook on low for 6-8 hours or high for 3-4 hours.
- In the last 30 minutes of cooking, add the ditalini pasta.
- Serve hot, garnished with Parmesan cheese if desired.
Notes
- For a vegetarian version, substitute ground beef with lentils.
- This dish can be made ahead of time and reheated.
