A comforting and hearty pasta dish inspired by the Olive Garden, made easy in a Crock Pot.

Ingredients

  • 1 pound ground beef
  • 1 can kidney beans, drained and rinsed
  • 1 can cannellini beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 ounces ditalini pasta

Instructions

  1. In a large skillet, brown the ground beef over medium heat. Drain excess fat.
  2. Combine ground beef, beans, diced tomatoes, carrots, celery, onion, garlic, beef broth, Italian seasoning, salt, and pepper in the Crock Pot.
  3. Cook on low for 6-8 hours or high for 3-4 hours.
  4. In the last 30 minutes of cooking, add the ditalini pasta.
  5. Serve hot, garnished with Parmesan cheese if desired.

Notes

  • For a vegetarian version, substitute ground beef with lentils.
  • This dish can be made ahead of time and reheated.
