  • 4 large bell peppers
  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 cup cooked quinoa
  • 1 cup diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, cook the turkey bacon until crispy, then crumble it.
  4. In the same skillet, add ground turkey and cook until browned.
  5. Add quinoa, diced tomatoes, crumbled bacon, and spices to the cooked turkey and mix well.
  6. Stuff the bell peppers with the turkey mixture and place them in a baking dish.
  7. Top with shredded cheese.
  8. Bake in the preheated oven for 25-30 minutes.
  9. Let cool slightly before serving.

  • For an extra kick, add some chopped jalapeños to the stuffing.
  • You can substitute quinoa with rice or couscous.
