  • 1 teaspoon salt
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 cup all-purpose flour
  • 3 eggs
  • 2 cups breadcrumbs
  • 1 tablespoon olive oil
  • 1 teaspoon black pepper

Instructions

  1. Slice the eggplants into 1/2 inch rounds and sprinkle salt on both sides. Let them sit for 30 minutes to draw out moisture.
  2. Rinse the eggplant slices and pat them dry with a paper towel.
  3. Set up a breading station with flour, beaten eggs, and breadcrumbs.
  4. Coat each eggplant slice in flour, dip in eggs, then coat with breadcrumbs.
  5. Heat olive oil in a skillet over medium heat and fry the eggplant slices until golden brown on both sides.
  6. In a baking dish, layer marinara sauce, eggplant slices, mozzarella, and Parmesan cheese. Repeat layers until all ingredients are used.
