  • 1 pound turkey bacon
  • 8 cups chicken broth
  • 1 cup diced onions
  • 1 cup diced carrots
  • 1 cup diced celery
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes
  • 1 cup acini di pepe pasta
  • 4 cups fresh spinach
  • 1/4 cup grated Parmesan cheese

Instructions

  1. In a large pot, cook the turkey bacon until crispy, then remove and crumble.
  2. In the same pot, add onions, carrots, celery, and cook until tender.
  3. Add garlic, oregano, basil, and red pepper flakes, cooking for another minute.
  4. Pour in the chicken broth and bring to a simmer.
  5. Add acini di pepe pasta and cook according to package instructions.
  6. Stir in fresh spinach and crumbled turkey bacon.
  7. Serve hot with grated Parmesan on top.

Notes

  • For a thicker soup, add more pasta.
