  • 4 pounds beef short ribs
  • 1 tablespoon olive oil
  • 1 cup red wine
  • 1 cup beef broth
  • 1 onion chopped
  • 4 cloves garlic minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat olive oil in the pressure cooker on the sauté setting.
  2. Season the short ribs with salt and pepper, then brown them on all sides in the oil.
  3. Add the onion and garlic, cooking until softened.
  4. Stir in tomato paste, thyme, and rosemary.
  5. Pour in red wine and beef broth, scraping up any browned bits from the bottom.
  6. Seal the pressure cooker and cook on high pressure for 45 minutes.
  7. Once done, allow the pressure to release naturally for 10 minutes, then quick release any remaining pressure.
  8. Remove the ribs and let them rest while thickening the sauce if desired.
