  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 can (13.5 ounces) coconut milk
  • 2 tablespoons red curry paste
  • 2 cups cauliflower rice
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine ground chicken, breadcrumbs, egg, garlic, ginger, salt, and pepper. Mix well.
  3. Shape the mixture into meatballs and place them on a baking sheet.
  4. Bake the meatballs for 15-20 minutes or until cooked through.
  5. In a pan, heat olive oil over medium heat. Add the coconut milk and red curry paste and stir until combined.
  6. Once the meatballs are done, add them to the curry sauce and simmer for 5 minutes.
  7. In another pan, sauté cauliflower rice for about 5 minutes until tender.
  8. Serve meatballs over cauliflower rice, drizzle with lime juice, and garnish with cilantro.

Notes

  • Adjust the spice level by adding more or less curry paste.
  • Serve with lime wedges for extra flavor.
