  • 1 cup diced onions
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1 can (14 oz) coconut milk
  • 1/2 cup tomato puree
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lemon juice

Instructions

  1. Season the chicken thighs with salt and pepper and place them in the slow cooker.
  2. In a bowl, mix the onions, garlic, ginger, garam masala, cumin, coriander, turmeric, coconut milk, and tomato puree. Pour this mixture over the chicken.
  3. Dot the top with butter and cover the slow cooker.
  4. Cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and fully cooked.
  5. Shred the chicken with two forks, stir well to combine with the sauce, and add lemon juice.
  6. Serve hot with rice or naan.
