  • 1 cup enchilada sauce
  • 8 corn tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chopped onion

Instructions

  1. In a bowl, mix the shredded chicken with enchilada sauce, cumin, garlic powder, salt, and pepper.
  2. Spread a thin layer of the mixture on the bottom of the slow cooker.
  3. Fill each tortilla with the chicken mixture and roll them up, placing them seam-side down in the slow cooker.
