2 cups cooked, shredded chicken
1 cup enchilada sauce
8 corn tortillas
1 cup shredded cheese (cheddar or Mexican blend)
1 teaspoon cumin
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup chopped onion
Instructions
In a bowl, mix the shredded chicken with enchilada sauce, cumin, garlic powder, salt, and pepper.
Spread a thin layer of the mixture on the bottom of the slow cooker.
Fill each tortilla with the chicken mixture and roll them up, placing them seam-side down in the slow cooker.
Top the rolled tortillas with remaining chicken mixture and chopped onions.
Sprinkle shredded cheese over the top.
Cover and cook on low for 3-4 hours or until heated through.
Notes
