  • 2 pounds boneless, skinless chicken thighs
  • 4 cups chicken broth
  • 3 cups carrots, chopped
  • 3 cups potatoes, diced
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. In the slow cooker, add the chicken thighs, broth, carrots, potatoes, onion, garlic, thyme, rosemary, salt, and pepper.
  2. Stir to combine all ingredients.
  3. Cover and cook on low for 6-8 hours, or until the chicken is cooked through and tender.
  4. Before serving, shred the chicken with two forks and stir back into the stew.
