Sonoko Sakai’s Okonomiyaki is a delicious and inventive take on the classic Japanese dish, incorporating turkey bacon for a healthier twist.

Ingredients

  • 1 cup all-purpose flour
  • 1 cup dashi stock
  • 1 large egg
  • 2 cups shredded cabbage
  • 1/2 cup green onions, chopped
  • 1 cup cooked turkey bacon, chopped
  • 1/4 cup pickled ginger, chopped
  • 1/4 cup mayonnaise
  • 1/4 cup okonomiyaki sauce
  • to taste bonito flakes

Instructions

  1. In a large bowl, whisk together the flour and dashi stock until smooth.
  2. Add the egg, cabbage, green onions, turkey bacon, and pickled ginger, mixing until well combined.
  3. Preheat a non-stick skillet over medium heat and lightly grease it.
  4. Pour in an appropriate amount of the batter to form a patty and cook until golden brown on one side, about 4-5 minutes.
  5. Flip the okonomiyaki and cook for another 4-5 minutes until fully cooked through.
  6. Serve hot topped with mayonnaise, okonomiyaki sauce, and bonito flakes.

Notes

  • For a vegetarian version, omit the turkey bacon.
  • Okonomiyaki is versatile; feel free to add any vegetables you like!
