  • 4 bell peppers, diced
  • 1 can (15 ounces) diced tomatoes
  • 4 cups chicken broth

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked quinoa
  • 1/2 cup shredded cheese

Instructions
