  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup coconut milk
  • 2 carrots, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 200g rice noodles
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • 1 red bell pepper, sliced
  • 1 jalapeño, sliced (optional)
  • 2 green onions, chopped
  • fresh cilantro for garnish

Instructions

  1. In a large pot, heat some oil over medium heat.
  2. Add the onions, garlic, and ginger, sautéing until fragrant.
  3. Pour in the chicken broth and coconut milk.
  4. Bring to a boil, then add the carrots and bell pepper.
  5. Add the shredded chicken and fish sauce, cooking for another 5 minutes.
  6. Meanwhile, prepare rice noodles according to package instructions.
  7. Stir in lime juice and season to taste.
  8. Serve hot, garnished with green onions and cilantro.

Notes

  • Adjust the spice level by adding more jalapeño.
  • For added flavor, use homemade chicken broth.
