  • 2 cups cashews, soaked
  • 1 cup mango puree
  • 1/2 cup coconut milk
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 cup almond flour
  • 2 tablespoons coconut sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Blend soaked cashews, mango puree, coconut milk, maple syrup, and melted coconut oil until smooth.
  3. In a separate bowl, mix almond flour and coconut sugar.
  4. Press the almond flour mixture into the base of a baking pan.
  5. Pour the mango mixture over the crust and smooth out.
  6. Bake for 25-30 minutes until set.
  7. Let cool before slicing into bars.

Notes

  • For best results, refrigerate for a few hours before serving.
  • Substitute mango with other fruits if desired.
