- 2 cups cashews, soaked
- 1 cup mango puree
- 1/2 cup coconut milk
- 1/4 cup maple syrup
- 1/4 cup coconut oil, melted
- 1 cup almond flour
- 2 tablespoons coconut sugar
- Preheat the oven to 350°F (175°C).
- Blend soaked cashews, mango puree, coconut milk, maple syrup, and melted coconut oil until smooth.
- In a separate bowl, mix almond flour and coconut sugar.
- Press the almond flour mixture into the base of a baking pan.
- Pour the mango mixture over the crust and smooth out.
- Bake for 25-30 minutes until set.
- Let cool before slicing into bars.
