Vegetable pasta bake is a comforting dish perfect for weeknight dinners.

Ingredients

  • 2 cups pasta
  • 1 cup chopped zucchini
  • 1 cup chopped bell peppers
  • 1 cup spinach
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large pot, cook pasta according to package instructions until al dente.
  3. Heat olive oil in a pan and sauté zucchini and bell peppers until tender.
  4. Add spinach and cook until wilted. Remove from heat.
  5. In a large bowl, combine cooked pasta, vegetables, marinara sauce, Italian seasoning, salt, and pepper.
  6. Transfer the mixture to a baking dish and top with mozzarella and Parmesan cheese.
  7. Bake for 25-30 minutes or until cheese is bubbly and golden brown.

Notes

  • Add cooked chicken or sausage for extra protein.
