  • 1 cup fresh raspberries
  • 1/2 cup white chocolate chips
  • 1/2 cup sugar
  • 1 teaspoon baking powder

  • 1/2 cup buttermilk
  • 1/4 cup vegetable oil

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the egg, buttermilk, and vegetable oil.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the raspberries and white chocolate chips.
  5. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
