A comforting and delicious bowl of yellow plantain porridge that warms the soul.

Ingredients

  • 2 ripe yellow plantains
  • 4 cups water
  • 1 cup coconut milk
  • 2 tablespoons sugar (or to taste)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Peel and chop the yellow plantains into small pieces.
  2. In a pot, add the water and chopped plantains. Bring to a boil.
  3. Reduce heat and let it simmer until the plantains are soft.
  4. Puree the mixture until smooth, then return to the pot.
  5. Add coconut milk, sugar, vanilla, and salt. Stir well and heat through.
  6. Serve warm and enjoy.
