- 2 ripe yellow plantains
- 4 cups water
- 1 cup coconut milk
- 2 tablespoons sugar (or to taste)
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- Peel and chop the yellow plantains into small pieces.
- In a pot, add the water and chopped plantains. Bring to a boil.
- Reduce heat and let it simmer until the plantains are soft.
